    I found making bread (using yeast) to be quite a challenge. If you follow the recipe blindly you may get a loaf that is too dry or too moist. The whole process of using yeast, watching it rise, pounding it down to rise again is quite fascinating. And kneading is both difficult, yet essential to develop the gluten into a usable loaf. The challenge is not to mix a few ingredients and bake something that falls apart or is hard as rock. The challenge is to learn enough about the bread making process to make a bread that is light yet strong enough to contain the bubbles.
